The Anything but Humble Carrot, Yotam Ottolenghi’s latest New York Times piece, is a moving, must-read tribute to the workhorse of root vegetables, the ubiquitous and under-appreciated carrot. Ottolenghi includes this recipe for seared carrots (he uses a grill pan) with yogurt and carrot-top oil, which showcases the carrot’s sharp and vibrant flavor and color.
